Easy Rainbow Popsicles

Happy Monday!

We are having such an absolutely wonderful heat wave here in the UK, and all I've been craving lately are popsicles! This is my third batch of them in the last week, so I thought I'd share the recipe with you all today. They are so easy, you only need four different types of fruit, a blender or food processor, and popsicle molds.

You'll need:

Juice of one whole orange

Almost an entire package of strawberries

One package of blueberries

Three to four kiwis

Start by squeezing as much juice out of the orange as possible. Pour the juice evenly between a mold that makes 8 popsicles. Place in the freezer for a minimum of an hour for it to begin hardening so the next layer of fruit won't mix with the juice.

In a food processor or blender puree the strawberries, and then pass them through a mesh sieve if desired to remove the seeds. Repeat the same process with the kiwis. With the blueberries, run them just a little longer through the processor to break down the skin of the berries. Puree and sieve the blueberries right before putting them in the pops because they develop a lumpy texture if it sits too long at room temperature.

After the orange juice has been freezing for an hour, begin to layer the fruits in. I started with kiwi, then added strawberry, then blueberry last. Let these freeze for about 6 hours, or overnight.

You could substitute all kinds of fruits for these easy popsicles, or just make them solidly one flavor. What kinds of fruits would you put in them? Leave me a comment below!

Have a very happy Monday!
