Homemade Pesto

Greetings!
Things have been pretty crazy around here the last month. Between traveling for two weeks straight and being crazy busy playing catching up for the last week, I finally was able to get back in my kitchen yesterday and do some cooking! I went for one of our favorite go to dinners, baked pesto chicken.
Basil is one of my favorite herbs to cook with, and this pesto recipe is delicious every time! It's quick, easy and you can use it a variety of different dishes.

In a food processor, add 2 cups of rinsed and dried fresh basil, 1/4 cup of toasted pine nuts, 1 garlic clove peeled or pre-chopped, 1/2 cup grated Parmesan cheese, salt and pepper to taste. Begin to blend it all together, and slowly add in 1/4 cup of olive oil until it becomes a thick and smooth consistency. Add more oil if necessary.

Make sure to store in the fridge in an airtight container. If there is no oil standing on top as pictured, drizzle a little over the top so it won't turn brown. This recipe freezes very well, just make sure to use within a couple months.

What do you like to make with pesto? Leave a comment below and tell me your favorite ways to use it!
Have a wonderful day!
