DIY Sushi Bowls

Greetings!
Lately I have been on an Asian food kick. My husband and I have been to our favorite Thai place three times in a few weeks time because I keep craving it! He thinks I'm crazy for always wanting the same thing, but I disagree. I can be quite the creature of habit and once I go somewhere I really like, all I want to eat is that for awhile!
The other day I came across a video on YouTube that was for DIY sushi bowls. I had never heard of them before, so I thought I would try my hand at making them for dinner last week. We both loved these so much I've made them three times in the last two weeks! Oops?
These bowls come together so quickly and require ingredients you'd most likely always have laying around your house! Plus, they are very filling and healthy too! This recipe makes 4 bowls. You can do salmon like I've done here, chicken, tofu, tuna, the options are endless! Salmon has been my personal favorite so far.
Your going to need:
For the rice:
1 1/2 cups brown rice
3 cups water
1 Tbsp rice vinegar
1/4 tsp Himalayan salt
For the Salmon (or other meat/fish that you prefer):
Olive oil drizzled over the meat/fish
Salt, pepper & garlic powder to your preferred taste
4 fillets of salmon
For the bowls:
2 avocados, cut into cubes
1 cucumber cut into small slices,
2-3 carrots cut into slices
Sriracha sauce
Teriyaki glaze
Sesame seeds

Start by putting the water on to boil. Preheat the oven to 375 degrees Fahrenheit. Rinse the rice before putting it on to cook as the package suggests, around 45 minutes or so.
When the rice has 30 minutes left, season the salmon with salt, pepper, garlic powder and drizzle with olive oil and cook in the oven for 25-30 minutes.
While everything is cooking, chop the carrots, cucumber and avocado.
After the rice is done cooking, fluff it with a fork and add in rice vinegar and salt. Stir really well.
To assemble the bowls, first add in rice, then the cucumbers, carrots and avocado. Place the salmon on top of that and drizzle with teriyaki glaze and sriracha. Sprinkle sesame seeds on top to finish and enjoy!
These bowls are so easy and so versatile! There are so many spins on these bowls that you can create from your favorite sushi rolls. What bowls would you create? Leave me a comment if you try this recipe! I guarantee you will love it as much as we did!
