Pumpkin Pecan Strudel Pie

Happy Thanksgiving everyone! I hope you are all cooking up amazingly delicious dishes to share with your friends and family today. This year we decided to keep it simple and just make enough food for the two of us so we don't have a bazillion leftovers. On our menu we have all the basics: Turkey, mashed potatoes and gravy, green bean casserole, rolls, and of course this delicious Pumpkin Pecan Strudel Pie pictured above!
I was thinking back on past Thanksgivings earlier today, and realized every time we have moved I start making a new dish at each location for the time we are there. When I lived in Kansas, my family and I always brought green bean casserole. In Charleston, we brought pumpkin cake rolls. When we moved to the UK, I started making this pumpkin pecan strudel pie. I have to say....This is my most favorite pie I have ever made in my life. I don't remember how I found the recipe either! Don't you just love when that happens and then you have to make it over and over again? READ NEXT: MAPLE CINNAMON GLAZED PUMPKIN SPICE SCONES

This pie is seriously the best Thanksgiving dessert EVER. I make every bit from scratch too! Now I know what your thinking, "holy cow you make every bit from scratch!?" YES! From the roasting the pumpkin to hand making the dough and whipped cream, it is ALL made from scratch! That's what puts this pie over the top and is guaranteed to be a crowd pleaser!

Here's what you'll need:
1 batch of handmade pie crust
15oz. homemade pumpkin puree
1 1/4 cups half and half
3 Tablespoons powdered sugar
1/2 cup firmly packed brown sugar
3 large eggs, lightly beaten
1 tablespoon all purpose flour
1 teaspoon pumpkin pie spice
1/4 Teaspoon salt
3 tablespoons pecan pieces
1 1/2 cups pecan halves and pieces
1 cup firmly packed brown sugar
1/4 cup all purpose flour
1/4 cup butter, melted
1/2 teaspoon pumpkin pie spice

Preheat oven to 350 degrees Fahrenheit.
For the crust: In a food processor, combine flour, powdered sugar, salt and butter. Pulse until the batter resembles fine crumbs. It's okay if some pieces are still bigger than others. Mix together the egg yolk and water then add to the dry ingredients. Pulse again until mix just comes together making sure to not overwork the dough. Wrap in saran wrap and refrigerate for 30 minutes to relax gluten before rolling out.

Roll out the dough on a floured surface, and then cut off any excess. Flute the edges of the pie by taking two fingers on the outside, and one on the inside of the dough. Push to create the desired design for pie edging. Take the 3 tablespoons of pecan pieces and spread into the bottom of the crust. Press the pecans into the crust gently.
For the pie filling: In a stand mixer or bowl, add remaining ingredients. Stir until well combined. Pour batter into the pie pan and bake at 350 for 45 minutes. Cover crust with aluminum foil after 20 minutes if desired to prevent excessive browning. While the pie is in the oven, prepare the strudel by adding all dry ingredients and mixing well before adding the melted butter. Mix well again and set aside.
After 45 minutes, turn the oven down to 325 degrees Fahrenheit. Carefully place the strudel topping on top of the pie and place back in the oven for 25 minutes. If needed, place foil over the top of the pie to prevent excessive browning. To cool, place baked pie on a wire rack for a minimum of 1-2 hours.
